Island Pineapple Tarts

pre baked mini tart shells
1
package Island Pineapple flavored Jello®
(smaller size)
2/3 C.
Boiling water
3/4 C.
Ice cubes
1/2 C.
Drained crushed pineapple
1/2 C.
Flaked coconut
1
8oz. container non dairy whipped topping
Place
pre baked tart shells into muffin pan.
Mix Jello® with 2/3 C boiling water until
completely dissolved. Add ice cubes
and stir until melted. Add non dairy whipped
cream to Jello® mixture and whisk until
smooth. Add thoroughly drained crushed
pineapple and coconut. Mix well. Put
bowl of mixture into refrigerator for 20
minutes to thicken. Spoon filling into
individual tarts. Place tarts back into
refrigerator and allow to set up over night.
Top with a dollop of non dairy whipped cream
right before you are ready to serve. Enjoy!
